On the restaurant side, the important decision not to focus on meat at the l'Orto fine dining Restaurant has allowed Executive Chef Charles Pearce and team to simultaneously reduce the hotel's carbon footprint by using local vegetables and fish from nearby Liguria, creating dishes that increasingly focus on avoiding waste.
In addition to recycling, a special effort is being made to minimise (aiming for zero) the use of single-use plastic.
For this major redevelopment project, a large-scale geothermal system was also invested in to enable the property to be as self-sufficient as possible in terms of heating and cooling, which is also ensured by a high level of thermal insulation throughout the building. Waste water undergoes aerobic treatment while rainwater is collected in special cisterns for reuse within the property. In addition, in order to reduce overall electricity consumption, home automation software has been implemented for energy control and management.
